Katie’s Klub Sandwich

Makes Serves 1 - (Each serving contains approx 385 kcal kcal)

Katie’s Klub Sandwich
The Ingredients

2 slices of wholemeal bread
1 tablespoon mayonnaise
½ teaspoon Dijon mustard
1 ripe tomato, cut into thin slices
3 slices cooked turkey slices or use small, cooked chicken fillet or leftover roast, sliced chicken
Handful mixed baby salad leaves
Freshly ground black pepper

The Method

Spread the two slices of bread lightly with the mayonnaise followed by the mustard.

Arrange the tomato slices on top of one of the pieces of bread. Season with pepper to taste. Cover with the turkey or chicken and then cover with a Handful of the baby salad leaves on top.

Put the other slice of bread on top and cut the sandwich on the diagonal.

Put the Katie’s klub sandwich on a plate to serve.

NOTE: Once the sandwich is made wrap in parchment paper, then tin foil to pack into a suitable container for a lunchbox.

*Suitable for vegetarians if you use plant based alternative instead of the turkey or chicken
